  • We use our hands to hold. Hold the plates, the hot and the cold. We hold the broom and the heavy cases. We hold the hand of the intern. We tell ourselves to hold it together, but we also hold each other, and endurance is easier together.

  • We take it for so many reasons. Flour and potatoes, we take what we can to save time. Never walk around with empty hands, they tell you. Always be in motion; use your hands. We take feedback, less good once than sometimes needed. We take so much bullshit, but most importantly, we take a step back and try to stay focused. Take it or leave it.

  • Hands guide, and thank god they do. We all start from scratch someday. No one is born perfect, no one is born a chef, a boss, a god in cocktails. Guide is needed in any milieu, and if you're lucky, you're being guided by someone with an actual idea of what they're doing.

  • We have them. They are there, and they have a purpose, so let's use them. We are given five fingers, and they can do so much good. Let's concentrate on the good and manifest the owner of those great hands that define us.
